Gourmet Escape Cape Mentelle International Cabernet Tasting

Gourmet Escape is a three day food and wine festival held each year in the Margaret River wine region. It has become a yearly favourite for locals and a huge drawcard for people interstate and internationally. Last year the festival clashed with some dates we had booked for a close friend’s birthday celebration in Lombok, so I thought we were only going to be able to make it down for the Friday. My usual plan of attack when attending a food festival is a crazed I-must-eat-all-the-things caper. I hate the thought that I might miss out on something delicious and end up booking back to back events like a lunatic. This approach often comes at a significant cost and thus our budget for these weekends is usually quite substantial.

When it dawned upon me that I only had a single day for Gourmet Escape, I thought I would push the boat out and chose one of the most expensive events: The International Cabernet Tasting at Cape Mentelle with James Halliday as a guest speaker and matched food by highly acclaimed chefs Jacques Reymond and Hadleigh Troy.

I should have known that it is impossible to try and plan your social life six months in advance. As it drew closer to the month of Gourmet Escape our travel plans fell through and subsequently the whole weekend opened up for us. One door closed and another door opened. I preceded to book a flurry of events and are yet to look at the damage it made on my credit card. I even bought tickets to a Fervor degustation for the evening after the Cabernet Celebration! This proved to be a learning lesson that I can no longer do two big food events in one day.

I have never been to an official wine tasting event before and whilst I am very experienced at drinking wine, I am a total amateur when it comes to tasting and describing wines. Cape Mentelle’s International Cabernet tasting is an event that has been running for over thirty years and at each event they select international wines from vintages from a specific year.

There were twenty wines selected for blind tasting from the vintage 2011. Cameron Murphy, the Estate Director at Cape Mentelle advised us that 2011 was a challenging year for many wine growing regions around the world resulting in some top labels not releasing a Cabernet or requesting that their wines were not to be included in the line-up for this event.

The wines were divided into three “brackets” and after tasting each bracket, we would congregate outside under the vines and listen to some top wine critics from around the country analyse and give their opinions. It was a very serious affair and once the tasting got under way the only noise I could hear were clinks of glasses hitting together and the occasional slurp from professional tasters spotted around the room.

We were given note books and pencils to take our own notes and with the ban on talking this gave me an opportunity to actually think about what I was tasting from each glass.

It took a couple of hours to get through the three brackets of wine accompanied by the wine critic’s discussions by which point I was desperate for something to eat. There was some plain bread and pear slices available to cleanse the palate between each bracket which I obviously couldn’t eat. After the tasting were completed, the list of wines were revealed for us to see. It was a proud moment to see that most of the critic’s best wine choices were from local WA wineries. Where the world had a bad vintage, our state seemed to come out with flying colours. Go WA!

With the formalities of the event over, we relaxed outside under the trees. There was free flowing Verve on pour coupled with some canapés to get us into the mood before lunch. For those first few brief minutes there was no gluten free option on offer and I watched the Boy devour his obscenely amazing smelling marron roll to himself. I was so hungry I nearly had shoestrings of saliva dripping down my face. Working my way through twenty wines has a way of doing that to my appetite! Thankfully I wasn’t kept waiting long and my own gluten free adapted marron roll made its way out of the kitchen before the Boy even had a chance to finish his.

Barbecued Arkady lamb breast with spicy tomato jam (GF)

The most popular canapé served was by far the Arkady lamb breast. Hardly an elegant morsel to eat at the best of times, I was lucky not to be wearing most of what I ate. Or maybe that was just the drool. After skipping breakfast followed by downing all those wines, I am assuring you I ate quite a few of these babies! 😉

After multiple rounds of lamb and marron, we made our way down onto the lawn where a beautiful white marquee was erected for lunch. We had live entertainment and the atmosphere was relaxed and jovial compared to the intense concentration and silence during the tastings.

Slow cooked ocean trout (GF)

Our first course was a velvety textured, slow cooked ocean trout served with a tomato and basil dressing, lemon celeriac remoulade and spiced marinated cucumber. After a morning of heavy reds, it was a nice interlude to lighten up the palate. The trout was matched with Cape Mentelle Wallcliffe Sauvignon Blanc Semillon 2012.

For the main course we received a tender Butterfield beef short rib alongside some charred carrots and pine nut cream. To pair with this dish all twenty of the 2011 Cabernets that we tasted earlier were brought out and poured liberally until the late afternoon. I appreciated why this event cost so much as they were very generous with the serves.

We ended our incredible day with a cheese board containing some of my favourite French cheeses; Marcel Petite Gruyere de Comte, Fourme d’Ambert and Jouvence Brie Fermier. I was even given gluten free crackers on the side which was thoughtful of the chefs.

The Cape Mentelle International Cabernet Tasting was an incredibly unique experience and something quite unlike anything I have done before. It is a long day of drinking with the event starting at 10am and running into the late afternoon. It attracted both serious wine buffs and amateurs like me and had a non-pretentious and relaxed vibe…provided you do not talk during the tasting (note to self).

Disclaimer: Chompchomp paid in full for her ticket to the Gourmet Escape International Cabernet Celebration 2014. And, for those enquiring….no, she did not fall on her head at this event. She did however discover that Jacques Reymond is her father’s dopplerganger and consequently filled by Cabernet she MAY have waltzed over to the famous chef with the Boy armed with a photo of her father on her phone to enlighten Jacques of this fact. Suffice to say Jacques had swilled his own substantial quantity of Cabernet that afternoon and was left somewhat confused by our excitement. She will let you decided for yourselves.

The venue is huge with a classy fine dining restaurant offering a degustation menu, a large beer hall facing out onto the vineyards serving shared tapas styled food, a casual beer garden where you can purchase “picnics” from the deli, private dining rooms, function rooms and more.

For the launch party, guests were treated to a number of bite size samples from the kitchen including plum coated slow roasted pork and the most tender Buffalo wings that slid off the bone in one gulp.

The service staff were very friendly and knowledgeable about the food that they were serving. After requesting what I could eat that was gluten free, one kind waitress came back minutes later with a plate of gluten free starters just for me.

Dotted around the vast venue were also some food stations. Our favourite was the sashimi and oyster bar which was set up inside the beer hall. Over the course of the evening the Boy nearly ate his whole body weight in sashimi and amidst a few groans was feeling a little overindulged for our drive homeward later that night.

Over in the beer garden were more food stations. The Peking Duck station was popular enough to accrue a queue of hungry guests however it was sadly not gluten free. I loved the colourful dessert station and was mesmerised by the chef torching the brulée as quickly as they were being whisked away by guests.

Mandoon Estate is a very impressive venue and would be a wonderful place to hire out for a large function or wedding party. I am hoping to return soon to check out their degustation menu which at a glance looked very focused on local produce from the region. Stay tuned for more….

Welcome speeches from Marco Maro from the ICCI

The Chamber has recently just finalised their list of certified Italian restaurants in Perth that have qualified for the internationally recognised Ospitalita’ Italianana quality assurance seal.  This is a certification recognised by the Italian Government to protect the traditions of Italian agricultural and food products and value Italian gastronomic culture. The guidelines to achieve accreditation are very strict and amongst more than 1000 certified restaurants around the world, 11 of those are here in lil’  Western Australia!

In true Italian style, there was far too much food for the evening launch and we were thoroughly stuffed with all the finger food before it even got to the main dishes. Not that it stopped any of us of course. Although a lot of the food was not gluten free, the smooth talking waiters made sure the suitable options kept heading my way. I feel rude turning food down and when it all tastes this good, well what can you do?

The prawn and pancetta prawns were the absolute bomb. Sticky balsamic drizzled over crunchy prawns wrapped in crisp salty pancetta. I’m sure I downed at least half a dozen of these babies.

The first two mains of ravioli and gnocchi were off the menu for me and I got a lot of sympathetic looks from the others as they slurped and scoffed down what I can only presume was really good!

I made up for it with the following main dishes which resultantly meant I ended up with very little photographic proof as I was too busy stuffing my face. The rack of lamb was the biggest winner for me; marinated in olive oil, lemon juice and oregano they were the juiciest chops I have ever eaten (and that is a big call).  I ended up eating way too many.

Macadamia Pannacotta with white chocolate sauce & Pistachio pannacotta with berry sauce

The night ended with some perfectly set pannacotta and without waiting for all those chops to hit the bottom of my stomach I downed one of each flavour.  My favourite was definitely the pistachio pannacotta with berry sauce. What a total pig.  I was glad the Boy drove us home as I slipped into a little nap on the drive back.

The Accento Italian Cooking Master Classes are held at the Accento Showroom, 256 Stirling Highway in Claremont. There will be 6 evening classes each hosted by one of the local chefs from the Ospitalita’ Italianana certified restaurants.

The cooking classes run from the 20th May until the 9th September 2013. All classes start at 6.30pm and you will all get to enjoy you meal at the end of the class. The cost per class is $90 and includes matched wines, or it’s $500 for the full course of six. Click here for more information.

Chompchomp was an invited guest of the ICCI and was able to enjoy this feast free of charge. Getting a free feed does not however buy my praise and I strive to ensure accurately documenting my experiences without bias.

In order to stay abreast of this ever evolving field I regularly attend veterinary conferences and congresses. Forever thirsty for new information and ways to better practice medicine, these conferences are often quite intense for me and I have been known to go through a whole biro pen from furiously scribbling down extra notes in the margins of our proceedings.

Vets are not unsociable folk by any means; however the extroverts are few and far between meaning at a conference I would be lucky if I managed to network with a small handful of colleagues each time. In stark contrast, the energy and excitement amongst the Eat Drink Blog delegates was infectious.  Being more isolated in Perth, there were many bloggers that I had never met. Yet over the past twelve months together we have shared life’s ups and downs via our blogs and social media. Such a warm and welcoming bunch of people filled the room and I sensed a strong sense of community amongst us from the outset.

This year was to be the first year that the conference spanned over two days and I cannot sing enough praise to the dedicated team of people responsible for making Eat Drink Blog such a successful weekend.

In the early stages of coping with a broken home, my Mum and I always found solace visiting the markets together.  Not only did our scant food budget thrive on the cheaper produce, the atmosphere and buzz was always enough for us to temporarily forget our pains and absorb the vitality. Returning to the markets some twenty years later conjured up a mix of emotions as this was one of the highlights of one of the darker times of my younger years.

After the market tour, delegates had the option of joining a winery tour in the Barossa or McLaren Vale, or to participate in a food writing workshop by acclaimed writer Dianne Jacob.  As much as the imagery of a road trip with a bunch of food obsessed bloggers sounded like a dream come true, I genuinely want to improve my writing abilities and thus opted for the workshop.

Coming over from wet weather and storms in Perth I wasn’t prepared for the stifling hot day in Adelaide and prickled with sweat as I peeled off my layers walking in the sunshine.  Killing time before the workshop we fortunately stumbled upon Dessert Story; a Taiwanese dessert restaurant. Desperate for something refreshing I ordered the Kiwifruit crushed ice. To my surprise out came a towering pyramid of syrupy bright green ice with chunks of kiwifruit tumbling down the sides like cartoon lava.  I was unable to finish it partly due to its gargantuan size and partly due to its sickening sweetness.  Dessert Story on Urbanspoon

Essential study fuel: chocolate coated coffee beans and peanuts.

For anyone interested in becoming a food writer, be it a professional journalist or an unschooled blogger, I can highly recommend attending one of Dianne Jacob’s food writing workshops or at least reading her book “Will Write for Food”. She made us all reflect critically on our writing styles and gave us lots of techniques to improve our style and find our “voice”. Throughout her three hour workshop, she made us all participate in exercises which although hard to do on the spot were effective at illustrating her points.

This is my description of eating a sweet potato chip using adjectives, simile and some emotional significance. Bear in mind this had to be written on the spot!

“The crown of my tooth nearly shatters like glass under the impact of the snap.  I start to salivate as I anticipate a piquant brininess only to be left underwhelmed by the subtlety, wimpy aftermath.  I breathe a deep sigh of relief as memories of my recurrent nightmares of rotting teeth fade back to the distant cobwebs of my mind. “

The other big take home point for me was the fact that gushing is boring.  It’s easy to write a review about a fantastic meal and a terrible one.  But most meals are neither of these and fit into somewhat of a grey area. What distinguishes the more talented writers is their ability to write about these grey areas and still manage to capture their readers.

I have my new challenge.  Mark my words; there will be no more “delicious”, “yummy” or “cooked to perfection” on Chompchomp from here forth!

 

Pizza Taste Testing at Crust Gourmet Pizza, Mount Lawley

The Beaufort street festival has grown incredibly since its inception nearly three years ago thanks to a lot of hard work by a group of very dedicated people. Last year more than 80 000 people attended and this year’s attendance is expected to tip at about 100 000!  The Festival captures the unique flair of the local community by embracing four faces of creative culture: independent local music, arts, fashion and food.

I am so disappointed that I will be missing the Festival this year as I will be overseas in Singapore, however just like the Mundaring Truffle Festival I will get there eventually! Thankfully I can still partake in a lot of the pre-Festival celebrations and the first of these was the Crust Pizza Tasting Session!

Foodie Craving’s Mount Lawley Crust Gourmet Pizza store will be positioned right in the heart of the Festival so she wanted some foodie opinions on what would be the best sizes and flavours to serve up to punters on the day.   I was nominated as the gluten free taster and was more than happy to help 😉

My quest to find great tasting gluten free pizza has paralleled with Lancelot’s search for the Holy Grail. Up until this night I have been unable to find a gluten free pizza that has a base that doesn’t taste gluten free. Many of them have a strong doughy aftertaste; like they haven’t been cooked properly yet the crust is often very hard and chewy.

To my satisfaction, Crust’s gluten free bases tasted, well, like normal pizza! Even the scrutinising tastebuds of the Boy thought they were really delicious! He normally despites gluten free pizzas with a passion yet he helped eat most of my four full sized specially made pizzas with me. I spoke in detail with Foodie Cravings regarding their food preparation and was pleased to hear that her kitchen staff seem well versed in understanding gluten cross contamination and wear gloves to carefully handle the bases. A big (cheesy) thumbs up from me!

Of all the pizzas I tried, my favourite two were not the ones I would have expected.  I am normally a supreme with anchovies kind of girl but I have to say my favourites were actually the vegie supreme and the pesto chicken club.  Needless to say I did still enjoy them all. My night ended with some decadent gluten free chocolate mousse while the others devoured some incredible looking dessert pizzas. My goodness we were all so full by the end!

A big thankyou to Michelle and her hard working kitchen team for feeding us for the night and I hope we returned the favour by helping her select the finalists for the Festival!

Truffle Degustation at Darlington Estate Winery, Perth Hills

I know, I know; I whinge about the winter chilliness a bit too much.  You see, I’m not normally that much of a whinger unless I’m sick or I’m cold.  However during winter I am generally both of those things more often than I am not.  This is why I am so thankful for the wondrous fungus Tuber melanosporum, or more commonly known as the black truffle.  Its short season coincides with the deepest part of winter here in Perth and is becoming a key element to my winter survival strategy.

Being right in the height of the truffle season I had already gone a bit giddy with my annual winter addiction at our truffled dinner at Divido and then even further at Clarke’s.  Although I knew the Mundaring Truffle Festival was only a few days away, I figured why not bury myself even deeper into truffle glory and enjoy it to its fullest!

Darlington Estate had kindly extended the invitation on Twitter to Perth bloggers to create a foodie table on their opening night of their Truffle Degustation.  I was joined by fellow bloggers Strawberry Thief, Red Hot Spatula and Perth Food Journal. Being relatively new to the blogging scene it was wonderful to be able to put faces to the blogs that I read each week.  Better still I knew that I would be dining with like-minded people who consider constantly photographing their food is a normal way of life.

Darlington Estate is one of the oldest wineries in the Perth Hills, and over the years they have won many awards both for their wines and for their restaurant. The vineyard is set on steep terraced slopes surrounded by bushland and is supposed to offer lovely views from the restaurant. Having only dined here at night, I have missed out on this part of the experience….poor me, I will have to come back again sometime! It can be hard work being a foodie!

Amuse bouche

Prior to commencing I was informed that the chef was well aware of my allergies and that all the dishes were able to be served to me relatively unadulterated except for the truffle brioche.  I was assured that the chef would come up with something else for me for this course.  To get us in the mood out came our amuse bouche; a seared scallop wrapped in prosciutto on a bed of cauliflower purée with salmon roe and truffle. This was a beautiful blend of flavours and balanced nicely although my scallop was ever so slightly overcooked.

Truffle brioche, truffle butter

I cursed my wretched gluten intolerance as I watched everyone sink their teeth into the soft and buttery brioche.  The truffle flecked butter spread creamily over it like velvet and was definitely a hit.

Truffle parsnip chips

Just as my jealousy started to heighten our waiter came over with my special gluten free replacement dish; a very generous sized bowl of truffle parsnip chips.  They were crisp and perfectly seasoned and I had to fight off the Boy from trying to steal a few from me (which he did actually successfully manage twice before I gave him a cold steel look….”don’t steal MY truffles!”).

Hervey Bay scallops, barigoule potatoes, truffle and cauliflower puree

Each dish that came out was so beautifully presented and the scallops were no exception. Again my scallops were cooked just slightly past that soft delicate point of perfection.  There was a hint of firmer chewiness but certainly not enough to be a significant detriment to the dish. The cauliflower purée and barigoule potatoes gave a hearty more wintery depth to this light dish making it a gorgeous entrée to kick off this cold night with.

Braised Linley Valley pork cheek, truffled almond puree, parsnip crisp, red wine jus

The braised Linley Valley pork cheek was also plated beautifully, if only I had better light for my photos to do this dish justice.  The meat was tender soft and the subtle sweetness of the truffled almond purée was delightful.  The jus was nearly good enough to lick the plate for.

Tinder Creek confit duck leg, wild mushroom risotto, truffled gruyere and white wine sauce

The duck was most definitely my favourite dish of the evening.   The meat was richly flavoursome and simply fell apart under my fork. The truffled gruyere oozed through the meaty flavoured wild mushroom risotto forming fabulous strings of cheesiness joining every forkful.

The palate cleanser was very refreshing with the delicate flavours of lychee and rosewater with just a hint of truffliciousness in the backdrop.

Pannacotta is on my list of favourite desserts of all time. This coffee and truffle version did not disappoint. It held perfect shape on the plate and was delicate and silky smooth.  The adorable little fluffy truffle passionfruit marshmallow gave the dish a twist of originality.

Unfortunately for me there were no gluten free crackers available for the cheese course.  Not that this ever stops me, I am more than happy to eat brie sans crackers! Especially if it’s been truffled!  The brie was soft and creamy and served at just the right temperature to allow the flavours to develop.

The petit fours consisted of the cutest little miniature toffee apples.  I have never really been into toffee apples myself and personally I would have preferred something chocolaty but if you are indeed a fan, these candied morsels would have been right up your alley.  The apple inside was cooked until it was soft and the toffee was hardened to a thin crisp shell.

For a degustation meal I was impressed with our serving sizes and considering the added truffle in every single dish I also thought the full ticket price of $110 (excluding drinks) was extremely good value. The service was attentive and friendly and we look forward to returning to the hills to visit Darlington Estate again.

Largesse Dinner #6 Petite Mort, Shenton Park

I was lucky enough to secure three tickets to the last of the series of the Largesse dinners.  These fabulous degustation evenings have formed a near cult following in Perth and are known to sell out within minutes of going on sale.  So what on Earth is Largesse you ask?

Imagine the Head Chefs from six award-winning restaurants from around Perth donating their talents and time to each create one dish to contribute toward a six course extravaganza. Better still each course is then matched with exquisite wines and most importantly all of the proceeds from the evening go toward a charity of the host chef’s choosing.  This year the charity of choice was The Royal Flying Doctors Service.

The six chefs are Scott O’Sullivan from Red Cabbage Food and Wine, Kiren Mainwaring from Dear Friends, Jason Jujnovich from Divido, Stephen Clarke of Clarkes of North Beach, Todd Stuart from Petite Mort and last but most definitely not least Hadleigh Troy from Restaurant Amusé.

This year the night was hosted at Petit Mort which is located in Shenton Park where the popular Star Anise resided for many years.  The evening had such a buzz of excitement about it and as I gazed around the room I wondered which faces belonged to other fellow Perth bloggers I knew were attending.  I have only been a blogger for about nine months now and have been blown away by the sense of camaraderie and open friendship that exists in this small little community of foodies.  My eyes have only really been opened to this supportive side of blogging since joining Twitter last month. Weirdly despite this short space of time, I feel like I already know these people without even having met them.

We were informed that the first two courses were to be swapped in order because Chef Scott needed some extra time to prepare his dish.  We were told he apparently lost track of time due to watching a UFC final! This got a round of chuckles from the guests.

Our first dish was air dried ham with Swan Valley Yolk, ajo blancho and foraged herbs.  This dish had a number of textural elements which all tied in magically with the fresh gooey yolk.  Ajo blanco is a Spanish soup made with crushed almonds and garlic; it was delicately dolloped around the plate and added in a creamy nutty texture to the crunchy herbs and chewy ham.

Smoked trout, Chilli squid, saffron (Scott O’Sullivan from Red Cabbage Food and Wine) matched with Singlefile SBS, Denmark 2009

Our next dish was house-smoked trout, chilli squid and saffron.  I was dismayed to see my gluten free version had the squid completely omitted.  This meant I only really got half the dish which was quite disappointing considering that with small degustation courses each component is an important element for the overall experience of the dish.  I would have preferred if the chef could have perhaps prepared my version gluten free rather than just leaving the squid off completely. Nevertheless the smoked trout was exquisitely soft and buttery leaving no oily aftertaste on the palate. My dining companions who received the full version of the dish commented that the chilli was not a strong enough feature and was barely noticeable.

Braised Rabbit, Lentils (Jason Jujnovich from Divido)

The next dish was a pasta dish which is obviously not gluten free so Chef Jason from Divido kindly went to the effort of creating a completely different alternate option for me.  I received braised rabbit with lentils. The rabbit had obviously been nurtured and cared for in the cooking process because I have never had such tender rabbit before; it had the soft texture of high quality smoked ham.  So simple yet so well executed.

The boys had Radicchio Tortellini served with melted Fontina drizzled over it.  I was informed that although you could clearly taste that the tortellini was freshly made, it was slightly undercooked and too firm; there was no slippery oyster textures between the teeth here!

The braised venison shin was my second favourite dish of the evening.  I simply could not fault it whatsoever.  It was accompanied by “Foie gras espuma” where we were told that the chef combined the decadent foie gras with Anglais sauce and piped it out of a canister like whipped cream.  The richly flavoured shin meat simply melted in my mouth and if I wasn’t seated at a communal table I might have been tempted to lick this plate clean.

There was a little interlude in the evening at this point allowing a few fellow foodies Perth Munchkin and Gastromony to pop over to our table to introduce themselves.  It was awesome to finally put some faces to the blogs that I have been following and I look forward to reading their posts on this fabulous night.

Pressed duck is a very traditional French dish where the whole entire duck organs and all is partially roasted then put through a special “duck press” to squeeze out the juices which are then used for the sauce.  This duck was richly flavoured but in the aftermath of the delicate venison shin its texture felt a little chewy and dry by comparison. It was accompanied by two types of wild mushrooms: the funnel shaped chanterelle and the strong tasting cepe. These were the perfect accompaniment and gave more depth to the dish with their earthy tones.

Chocolate, Caramel, Sorrell (Hadleigh Troy from Restaurant Amusé) matched with Barbadillo Pedro Ximenez, Spain

The dessert was by far and by large the highlight of the evening for me.  It reaffirmed to me why Restaurant Amusé remains my most revered dining establishment in Perth.  Chef Hadleigh always manages to create food art that is not only visually stunning, but does incredible things to your palate. His dish “chocolate, caramel and sorrel” spanned across a wide range of exquisite textures, temperatures and flavours.  The dish started with crunchy, crisp sorrel meringue that completely dissolved on contact with your tongue, onto cool firm chocolate ice-cream that nearly had the chewy texture of a chocolate truffle, and finally ending of a bed of warmed gooey caramel. To finish off the decadence there were fine shavings of white chocolate crumbs over the top to introduce another layer of alternate texture and flavour.

The last of the Largesse evenings was an experience I’m glad I didn’t miss; a night of talented chefs showcasing their abilities in the name of a worthy charitable cause.  Although I know the Chefs all said this is their last, surely they can start up something new and similar in concept?  The evening has inspired me to visit those restaurants out of the six that I haven’t been to yet and more importantly I want to get back to Amusé for what will be the fourth time! Last time we were we spent nearly six glorious hours overindulging ourselves in a night I will never forget.
