Taste of Perth 2015: My Gluten Free Eats

Taste of Perth 2015 proved that this is a city of passionate and dedicated gourmands. Over 15,000 people braved strong winds and horizontal rain to enjoy icon dishes from our city’s best restaurants served up by the Head Chefs themselves.

It was a very wet weekend with only a brief few hours of sunshine during the Friday lunch session which was fortunately the session that I attended! The festival is divided into lunch and dinner sessions which allows you four hours to eat, drink and mingle with friends. Food is purchased using “Crowns” which one Crown equally the value of $1.

I was joined by my fellow blogging friends who, like me, know the importance of having a “Taste of Perth Game Plan”. Prior to attending each of us had read the full menu, decided on our chosen dishes and could visualise the basic map layout in our heads. This is serious business!

The lack of indication for the gluten free dishes on the menu was a slight source of frustration for me. Some stalls can develop reasonable sized queues and no one wants to wait in line to find out they cannot order anything. Not wanting my frustration to turn into disappointment, I created a Plan B in the case that my desired dishes were glutenised. Yes that is a word.

Nobu’s 9+ Wagyu Carpaccio (GF adapted, 32 Crowns)

After a few snacks in the corporate lounge, we kicked off our designer degustation at Nobu with their icon dish of 9+ Wagyu Carpaccio served with a slightly gooey quail egg and a kick of aji amarillo aioli. My dish was gluten free adapted with the omission of soy-salt. Whilst some may baulk at the price to portion ratio of this dish, I assure you that it would take just one mouthful of that buttery meat to liquefy on your tongue to make you understand what real Wagyu is.

El Público’s Lamb Ribs (GF, 12 Crowns)

Nobu’s spicy aji amarillo aioli lingered on our palates making the perfect introduction to head to El Público’s stall for some Mexican. I had already had the pleasure of tasting their dishes at the sneak preview a few weeks back so I looking forward to more.

I loved the sweet freshness of the street corn charred and braised served with crema, chili, lime & fresh cheese.

El Público’s ICON DISH Flavours of Mexico (GF, 30 Crowns)

Later that night on the evening session, the Boy was desperate to try El Público’s icon dish called the “Flavours of Mexico” as he hasn’t had the chance to chow down bugs since we last visited Thailand. The fried crickets were served with two shots of throat clearing mezcal.

Bib & Tucker’s Rosella Flower Cured Kingfish (GF, 12 Crowns)

Bib & Tucker had a few gluten free options on offer. The colourful rosella flower cured kingfish with beetroot, finger limes and beach herbs injected much needed vibrancy to the afternoon as the sun began to slink behind the rain clouds.

Bib & Tucker’s ICON DISH Flinders Island Wallaby Shank (GF, 16 Crowns)

Their icon dish was Flinders Island wallaby shank served with textured puffed wild rice and pickled grape agrodolce. Head Chef Scott Bridger demonstrated how to prepare this dish in the Electrolux Taste Theatre where the aromas of his cooking only served to increase our appetites even more.

Modo Mio’s Vitello Tonnato (GF, 6 Crowns)

Moving on from Bib & Tucker, I couldn’t stop myself nabbing a bite sized serve of Modo Mio’s vitello tonnato as it is one of my favourite dishes from their restaurant. The tender, thinly sliced veal was drizzled generously with tuna and caper mayo, topped with a quail egg and finished with a splash of truffle oil. However it really was not much more than a mouthful.

As we all looked at our watches, we realised we were running out of time! I was feeling rather content and happily followed the consensus of the group to head to Asado.

I quickly deduced that Asado is the place to be if you are a meat lover. I stood in a trance for more than a few minutes watching the chefs meticulously cook thick chunks of sizzling marbled meat on the BBQ grill.

Eventually I broke away my gaze, presumably because my eyes were tearing from all the smoke and decided I had eaten enough to satisfy my savoury tastebuds. I was ready for a sugar hit.

Asado’s Burnt Banana (not GF, 6 Crowns)

I was in luck as Asado was one of the few stalls offering a dessert option. Their burnt banana dish was not gluten free as it came with a butter biscuit base. I was grateful that the chefs were happy to make me a special adapted versio.

Asado’s Burnt Banana (GF adapted, 6 Crowns)

The banana was caramelised with a satisfying crunchy layer but I have to say it was the dulce de leche that won me over. I know salted caramel is starting to be a bit old hat, but I still love it!

Bistro Guillaume’s Macarons

With the day nearly over and my stomach nearly overflowing into my oesophagus, I accepted that if I bought any more food it would need to come home in a doggy bag. Of course that wasn’t a problem, and with a surprisingly quick step for someone so full I managed to whisk over to Bistro Guillaume.

Bistro Guillaume’s Duo of Macarons (GF, 8 Crowns)

Last year Bistro Guillaume’s massive “macaron burger”, or macaroon as it was inaccurately called, was enough to out-macaron even me! This year it was replaced with a more digestable boxed “Duo” of salted caramel and strawberry macarons although they were still quite a decent size. Sugar high here we come!

Honeycake (GF version)

As we were leaving Taste of Perth, we walked past the Honeycake stall and I noticed a little “gluten free available” sign on their table. I have attempted to try tasting the Honeycake for months and months after my dear friend Michelle from Foodie Cravings told me there is a gluten free option. Sadly every time I try to buy one they have sold out….but not this time! Oh my, I can now understand what Michelle was on about because it really is worth the hype!

Taste of Perth runs every year in May and brings out talent from our top restaurants all in one location. There are also many other wine and food producer stalls to visit, entertainment and VIP lounges for those wanting something a bit more special. Whilst it isn’t the cheapest food festival on the circuit it is one that I always thoroughly enjoy.

Interview with Peter Manifis of InContro Restaurant & Mentor chef for WA Signature Dish Competition

Prior to travelling up to the North West corner of Australia for the WA Signature Dish Gascoyne regional final, I wanted to touch base with the region’s designated chef Peter Manifis. Peter will be judging the four finalists in a cook off in order to select the winning dish that will represent the Gascoyne for the finale. He will then spend time closely with the regional winner mentoring and training them to give them the best chance at winning the competition.

Peter is the part owner and Executive chef for InContro, one of the fine dining local restaurants in my area. The restaurant is located on the South Perth Esplanade and overlooks the Swan River facing towards the Perth City skyline. It makes such a romantic spot for an evening meal offering uninterrupted views of the city lights twinkling away on the water. The Boy and I have celebrated many special occasions at InContro so I was excited when I found out that I was to be working with Peter. Upon meeting him I was inspired to see someone even more enthusiastic and energetic than I am. Those of you who have met me will know that this is really quite an achievement!

Whilst I understand that Chefs are often very busy people, I was grateful he took time out to have a chat with me and share some of his insights into our city’s food industry. Peter, you are obviously a very passionate foodie, when and how did this love affair with food start?

It all started with my grandparents owning fruit and vegetable shops in Perth when I was very young, food has always been in my blood.  Moving on to my parents having fish and chip shops, a fish factory, processing plant and selling fish in my early years from age 2 – 15.  I have grown up very involved in the food industry.  Then of course I got my apprenticeship at the Loose Box.

You underwent your chef’s training at the highly acclaimed Loose Box under the guidance of Chef Alain Farbregues who is recognised as one of our city’s best French chefs. How has working with Alain influenced your career today?

Working with Alain has had a great influence on my work and career.  It has given me discipline, a good work ethic and enhanced my passion for food.  Working under Alain gave me all round knowledge of the basics of the European style of cooking this then gives the grounds for everything else to follow.  This is priceless.

Over the past few years we have seen Western Australia grow into a State of avid foodies with an abundance of fantastic new venues opening and food festivals being held all over the State. What excites you about the food scene here in Western Australia?

The food scene here in Western Australia is fantastic and I was part of it before it started to get so fancy. It excites me to know that I stayed here in WA to help be a small part of what is such an amazing food industry we have today.

Your restaurant In Contro in South Perth has the reputation for being one of Perth’s top seafood restaurants with much of your produce sourced from our State’s North West. What are you favourite ingredients from the Gascoyne region and what makes it so special?

My favourite ingredients are, Shark Bay wild prawns and Plantation vegetables.  I am so passionate about this as I get to see the love people put into this produce and this reflects in what we get delivered to the restaurant.  This is really special for me.

WA’s Signature Dish is an exciting competition hosted by Buy West Eat Best over the next few months. This competition is open to amateur cooks who love food and cooking but are not professional chefs. The aim is to find the ultimate recipe that puts our State on the plate. You have been chosen to be the mentor chef for the Gascoyne region’s finalist. What is your best advice for the four contestants attending the regional cook off held in Carnarvon next Monday?

My advice is this, Regional produce! Use as much of it as you can and just keep it as simple as possible, let the produce speak for itself.

I hear you will be starring on the chef line up for this winter’s Truffle Kerfuffle Festival. I am a total truffle addict and have already booked up our weekend to be full of trufflicious indulgence. How will you be involved with this exciting event?

I am also a massive truffle fan and always get involved with anything truffle. I am one of four chefs who will have truffle potato stand.  We are cooking two major dinners for over 200 guests cooking a selection of canapés and protein and celebrating the produce with truffle.

Finally, I have dined in your restaurant many times over the years and always found your staff to be very helpful with respect to my gluten intolerance. Do you have any family members with food allergies or intolerances?

None of my family members have any allergies or intolerances, however, I do have staff members and customers who do.  I also find that as I work on the restaurant floor as well as the kitchen I understand and appreciate people’s requirements and feel they deserve food which is just as varied and exciting as for people who can eat everything.  This is why I try to be innovative and always create new and exciting dishes to accommodate everyone.

We had only been back in Perth from our tropical holiday in Vietnam for 24 hours and yet we were at it again. Eating. Although we covered a fair bit of ground exploring Vietnam and seeing all the sights, the thing that we did most was eat food. All the food. We both have a shared habit of overeating whilst on holidays and this holiday won hands down for being the feast of the century. Consequently, on our journey homeward there was a lot of talk between us about juice fasts, diets and eating a lot less in general. But old habits die-hard and after running around on some errands in City we found ourselves at The Heritage for a late afternoon lunch.

Moet Champagne ($15/glass) & oysters ($42)

I am a girl who loves her French champagne however I could hardly say that Moet is my favourite. In fact, I have been known on occasion after drinking a glass or two of a more refined champagne to bad mouth it. The Heritage serve glasses of Moet priced at a very drinkable $15 a glass so despite my tendency to champagne snobbery I could hardly say no. We paired it with a dozen freshly shucked oysters from Frankland Harbour in South Australia. Served perfectly with wedges of fresh lemon and Tabasco sauce, each mouthful slipped down our gullet leaving us with a breath of fresh sea air.

Roast pumpkin, macadamia, feta ($12, GF)

I was craving salad like a health freak and consequently got a bit over excited ordering us a couple of options. Considering the serving size they were all very decently priced ranging from $9-17. The green salad came with plump grilled mushrooms, avocado and asparagus and although it wasn’t much to look at it hit the spot for me. Fresh herbs such as mint and parsley were generously tossed through giving considerable flavour. When placing our order I forgot to mention to our waitress that I cannot eat onion but the pieces were large enough for me to pick out.

Cured and smoked salmon, grilled melon, salmon roe ($21, GF)

The richly coloured salmon was cured in-house with sugar, salt and spices before being smoked with hickory chips giving a buttery smooth texture and subtle sweet, smoky after-taste. It was perched atop of slice of sweet watermelon and dotted with salmon roe, microherbs and watermelon foam.

Initially we had good intentions to exhibit portion control and planned to just order ourselves a couple of light dishes however our holiday binge eating had effectively stretched the size of our stomachs and our waistlines. This meant that after finishing off our oysters, the salmon and all the salads we were still left wanting more.

Grand platter ($55)

Another round of champagne seemed like a wise idea and so to go with our drinks we ordered the somewhat healthy “Grand Platter” which comes with four oysters, four scallops and four prawns to share along with some dipping sauces and seaweed salad. I was informed that the sauces were all gluten free but the seaweed salad was not.

The prawns were small, brightly coloured and crunchy fresh. One of our tests to assess the freshness of a prawn is to suck out the head. A prawn head from a super fresh specimen is an absolute culinary delight; do not knock it until you have tried it. Do however make sure you avoid trying this with a not-so-fresh critter as you will be unlikely to want to attempt it again.

Having dessert at the end of a meal is another hard habit to break and I blame my Mum for inheriting her sweet tooth. I struggle to finish a meal on a savoury note and this was no exception. After a small amount of to-ing and fro-ing by our waitress to the kitchen to determine what desserts were gluten free, I was advised to order the crème brûlée.

Crème brûlée ($14, GF)

Crème brûlée is one of my favourite desserts and I’m so lucky that it is usually gluten free. The Heritage’s version is a reasonable sized serve and could have easily been shared between the two of us. The custard was set beautifully and ended with a creamy finish.

Selection of house made sorbet & icecream ($13)

The Boy predictably chose the selection of house made sorbets and ice cream for his dessert. He is never really a dessert person unless it’s ice cream. Or so he keeps telling me. That didn’t seem to stop him from helping finish off my overly generous serve of luscious brûlée.

The Heritage is a lovely mix of the formality and classiness characteristic of their neighbours Print Hall and The Trustee with a more casual styled and priced menu. Their fresh faced staff are enthusiastic and helpful and I look forward to returning.

For the 2014  Eat Drink Perth Festival, The Heritage will be holding a Wine Maker’s Dinner with food matched with Champagne from Piper & Charles Heidsieck on Tuesday 8th April 2014 at 6.30pm. Price is $149 per person for a three course dinner with matched champagne.

Love is in the Air at Rochelle Adonis's Valentine's Day Dessert Degustation

After nearly sixteen years of togetherness, the Boy and I still manage to find ways to surprise each other. Gestures of love can be as small as grabbing an unrequested favourite snack at the local deli right through to spontaneous bouquets of flowers, presents and most excitingly degustations! The Boy has always claimed to not be a dessert person however over recent months I realise this is not actually the case. He certainly doesn’t like your more traditional stodgy cakes and puddings but he is more than happy to fight me spoon for spoon for something fancier and somewhat de-constructed.

For Valentine’s Day this year I thought I would take a punt and secretly book us a table at Rochelle Adonis for their sensuous aphrodisiac laced dessert degustation. Having already blogged about Rochelle Adonis several times, I didn’t want to ruin the mood of our romantic evening with a series of photo shoots and although I brought my camera with me I didn’t really take my photography seriously. Our evening turned out to be such a beautiful experience that despite the poor quality of my images I am happy to swallow my pride and share it with you. You may notice that the quality of photos deteriorates further more as the night goes on and my attention gets dragged away.

Every course was careful created to enhance the love in the air using ingredients designed to tantalise the senses. We had our own private table out in the courtyard surrounded by fairy lights and scented candles. It felt like we were in our own little world and let all our cares and worries of the week wash away as we soaked up the romantic atmosphere.

“A letter to Cupid with Love potion number #9”

Our first course started off with glasses of Mumm champagne paired with spoons of dreamy coloured spheres. Each sphere was flavoured differently and burst in the mouth to reveal three flavours; strawberry and slow gin, mango and triple sec, and clove, honey apple and whisky.

It felt like a boozy version of bubble tea which many of you know I absolutely love. In fact any food or drink that involves little burstable spheres excites me!

The second component to this course was hidden in two bright red envelopes. Inside each envelope was a square of paper thin Rochelle Adonis nougat and a pen with edible ink.

Orange flower honey, peach and almond

As the sun set, we were left with only the flickering light of the candles and soft glow of the fairy lights so we inched our chairs closer together ready for the next course. It was titled “Orange flower honey, peach and almond”. As pretty as I would always expect from this team, this dish contained a soft crumbled base of malted almond crumbs, poached peach slivers, honey, cinnamon and ginger. It was finished with a smooth peach and cognac gel and garnished with shards of peach meringue.

Lovingtons

The third course was one of my favourites; lovingtons. It was no problem for the chef to convert this gorgeousness to be gluten free and I was thankful for their efforts. A lovable heart-shaped lamington played centre stage for this dish and it was filled with yuzu curd and dipped in raspberry gel. It lay innocently on a raspberry “cloud” that contained a surprise of lychee parfait inside it. Mango puree and mandarin snow added sweet and citrusy notes to the dish. It was garnished with blueberries, lychee and raspberries. This had a serious wow factor!

To break the dessert degustation into two, our next course was a savoury course; cheese. Well cheese IS part of a proper dessert isn’t it? This was the only course that the gluten free option looked any different from the Boy’s. For everything else the chef managed to make our dishes appear the same. There was no missing out for me on this dego! The Boy received Fourme d’Ambert filled cannoli with a fig and salsa verd, whipped triple cream goats cheese infused with caraway and porcini with a beetroot sponge, and his favourite a gruyere stuffed zucchini flower.

THE best cheese toasty (all GF)

The highlight of my gluten free cheese course was humbly described by our waitress as a gruyere cheese toasty. It was a small, wafer thin rectangle of gluten free bread topped with cheese that in all honesty initially made me think … “Really?”

That was until I bit into it.

How could something so thin and little still contain all the vital aspects of texture and flavour of a perfect cheese toasty? The outside was crunchy crisp, the inside oozed gooey, cheesy goodness and there was enough flavour to knock my socks off.

Lingot triple cream goats cheese

There were two other components on my cheese course. Creamy blobs of Cashel blue contrasted wondrously with the sweetness of fresh figs and salsa verd. The Lingot triple cream goats cheese was served deconstructed with gluten free quinoa croutons and golden baby beets.

Pimms #1 sorbet with cucumber

To move our palates back to the realm of sweets we were provided with one of Rochelle’s signature styled sorbets. Everywhere we go recently we have been drinking Pimm’s cocktails laced with fresh fruit and it was a lovely coincidence to see it feature in the sorbet.

Perfectly light and nearly fizzy, the sorbet was made with strawberry and orange and coated with borage snow. Cleansed and refreshed we were ready for more dessert!

While waiting for our next course we couldn’t help ourselves from opening our salted caramels and devouring them. Unlike a lot of chewy hard caramels these were buttery soft and dissolved in the mouth. They were a perfect match with the Stella Bella Pink Muscat I had sneakily stashed in my handbag in case we drank our way through the provided champagne.

Blood plum, apricot and rosemary

Our pre-dessert was made from blood plums, apricot and rosemary. A tart strap of blood plum “leather” and compote was paired with a creamy rosemary white chocolate mousse, green apple gel and apricot “fluff”. It was a gentle transition to take us to the last but not least course.

As our final dish arrived I was amazed that despite enjoying six courses of dessert, I was left just as satisfied as if it were a “normal” degustation. Each plate had brought with it a mini-journey for the senses and I was excited to see how it all would end. Regrettably for you dear readers, my mind was taken far away from focusing on obtaining you some beautiful photos, in fact it seemed far away from focus altogether! I was too lost in enjoying the emotions and happiness we both felt for each other and in the sheer enjoyment of this last scrumptious finale. The last dish was titled “Roses and red and violets are blue, once I had a shattered heart and now I’m with you.”

Using Valrhona’s 64% Ariguani chocolate the chef created an incredible “shattered mousse” adorned with rose petals. It was sided by a chunk of Rochelle Adonis’s signature chocolate cake blushed with brilliant coloured strawberry powder. Next to these delicacies sat a tear drop shaped ampoule that was filled with rose water. The idea was to shatter the ampoule over the dessert enhancing it with gentle flavour.

I have been told by others that have previously done a dessert degustation that it isn’t for the light hearted. However after sharing this experience with someone who claims to not even be into desserts I can safely say this is not the case. Our evening was one of the best nights out we have had in a long time and couldn’t have come at a better time for us.

There and Back Again to Print Hall, Brookfield Place, Perth City

For those of you living in Perth, think back to what it used to be like on a weeknight in our City five years ago.  Once the day ended and the clock hit five, all the bustling daytime cafes and bars would shut and everyone would head straight home. Before long the streets of our capital would be stark empty and it was like you were standing in a ghost town. A rapidly growing city with a population of over one million people and yet we turned our backs on our own city centre!? Thankfully things didn’t stay that way forever and after some government incentives like the new small bars laws and the construction of flashy inner city apartment blocks; little sparks of life started popping up everywhere throughout the city. This energy has now burst into full flame and the memory of Perth’s once deserted streets is just an embarrassment of the past.

One of the most exciting new developments in the city is Brookfield Place situated on St Georges Terrace.  This complex is based around the BHP skyscraper and is an entertainment hub filled with high end restaurants and bars. Print Hall is one of the more sophisticated new eating locations within the complex and is housed in the beautiful heritage listed Newspaper House. Print Hall recently won six awards at the Australian Hotels Association Western Australia Hospitality Awards for Excellence and has also received one star in the 2014 Good Food Guide. The kitchen team is led by David Coomer of iconic Star Anise fame and Executive chef Shane Watson and these talented guys are very focused on using Western Australian produce to serve European influenced dishes.

My first visit to Print Hall was earlier in the year when we stopped for a couple of quick drinks before seeing David Attenborough’s live show at the Perth Convention Centre. Immediately upon entering the bar I was wowed by its opulence and sense of grandeur; it is massive by Perth standards. Situated at one end of the luxurious bar is a permanent oyster bar manned by the lovely Jerry Fraser who is also known as the “King of Oysters”. Jerry is there nearly every day freshly shucking oysters on demand for hungry diners in addition to serving a variety of super fresh local seafood. On this night however we missed out on meeting the man himself and got his more than competent side kick Tony.

Like moths attracted to a bright light the Boy and I gravitated over to the neon “Jerry’s Oysters” sign and sat ourselves in front of Tony at the bar. Looking at my clock I saw we had exactly one hour until the show began and ambitiously ordered the biggest and most expensive seafood platter to share; “The Print Hall”. The Boy gave me a bit of a high brow look but didn’t make any attempts to stop me ordering it.

Tony assured us he would have our platter ready for us in a jiffy and made quick work preparing everything giving us plenty of time to make a total mess of ourselves as we devoured it.

Our enormous platter was piled high with all the delights of the sea including a full Western rock lobster, Blue Ridge marron, Blue Manna crab, Tiger prawns, mussels, cambinata yabbies and oysters. Nothing beats the taste of freshly shucked oysters in my humble opinion; I can eat them by the dozen. These combined with nearly every other tasty crustacean from the sea it was enough to send us both into a dizzy head spin. It was a fabulous experience and worth every single cent.

After our brief but awesome experience at Print Hall Bar, I was very eager to return. My Dad and Stepmum are two very well-travelled foodies who live in the heart of Melbourne just off Flinders Lane where they are surrounded by the City’s top end restaurants. I knew they would be hard to impress so when they came over for a whirlwind business trip to Perth I took a punt and booked a table in the Print Hall Dining Room.

Apple Daily Cocktail special ($18)

We started the night off with a round of cocktails upstairs in the Apple Daily Bar overlooking Print Hall’s long bar. Dad and the Boy both ordered the daily special cocktail which was made with apple and rosemary. Not really the Boy’s thing however as you may know he is a purist strawberry daiquiri fan. This drink wasn’t pink enough for him!

I ordered the White Lady Boy made with white spirits, yuzu and ginger. It was topped with pretty little flowers and was fresh, light and far too easy to knock back. I could have gulped another down if it wasn’t a work night! My Stepmum ordered Milk of the Poppy with pandan, mandarin and coconut and her drink tasted like an alcoholic version of something you get off the dessert tray at Dim sum. Just minus the cubes and balls.

After our drinks we were escorted back downstairs to the Print Hall Dining Room. My heart sunk a little as I looked around and saw the dim level of ambient lighting as I knew my photography skills were in for a test. Not to worry, I’m always up for a challenge and what better way to create a beautiful mood than to turn the lights down real low?

After listening to our waitress give us a very polished but somewhat lengthy description of the three champagnes served by the glass, she brought our complementary amuse bouche to the table. A curious zesty tasting disc of fresh cheese made from a mixture of mascarpone, cream, feta and yoghurt and garnished with dried black olives, roasted parmesan, dill pollen and some fresh dill. It was so soft that it begun to melt sumptuously on the plate.

To scoop the cheese up we were given an enormous cracker that looks like something from another planet. It was gluten free and made from potato, tapioca and brown rice flours. It had a similar texture to a prawn cracker being light and easy to start. It was fun passing it around taking turns to snap off a piece.

Blue Manna crab (GF version)

We chose to have the four course meal option for $110 per person as there was something on the menu for everyone including both vegetarian and gluten free options. To start off with Dad and I chose the Blue Manna crab with curried egg, cucumber and avruga caviar. The crab was so sweet it was almost like eating dessert and the addition of the avruga gave it a wonderful salty finish. My gluten free version omitted the crisp bread however my dish didn’t feel unfinished without it. Our waitress gave me another giant sized cracker in case I wanted that textural crunchy component.

The Boy and my Step mum chose the tartare of Point Samson scampi. It came with a flavoursome carrot, ginger and orange puree and tiny slivers of seaweed and micro herbs.

Wood grilled black salsify, cavolo nero (kale), ricotta, oyster mushrooms

The Boy chose the vegetarian option of wood grilled black salsify for his second course option. Black salsify is a root vegetable that belongs to the dandelion family and is also known as the oyster plant because it has an oyster like taste when it is cooked. It is considered to be very nutritious containing proteins, fats, essential amino acids, potassium, iron, and vitamins A, B1, E and C. It was served with brilliant green kale, hot smoked ricotta and meaty oyster mushrooms.

Roasted Pigeon breast, juniper, pickled beetroot, radicchio

The remainder of us chose the roasted pigeon breast for our second course. The pigeon was cured in gin, juniper and sage and then roasted to a luscious ruby red rare.  To further enhance the rich colours and flavours, a chunk of creamy rare seared chicken liver was buried in amongst the tender breast along with sweet pickled and pureed beetroot.

Some slightly bitter cooked radicchio leaves were also tossed in there giving a wonderfully diverse tickle to my taste-buds. As I savoured every twist and turn of this dish’s elements I looked up to see both my Dad and Stepmum’s facial expressions indicating they were doing the same!

Pan roasted Red Emperor, wood grilled mussels and squid, brandade, sofrito

The main course fish of the day was Red Emperor and have to I apologise to you my dear readers as you will only get to see and hear about one main dish despite there being a number of other beautiful options on the menu. It is a rare occasion that I dine out with my family and we all order the same thing but we did this time round. When I first moved out of home at the tender age of seventeen, the first whole fish I ever attempted to cook was an enormous Red Emperor. It barely fit into my oven and my fellow flat mates looked on with suspicion and doubt. Thankfully the fish turned out perfectly, I proved them all wrong and my love for this fish has stayed ever since. Print Hall did not disappoint and I was served an exquisitely cooked thick wedge of juicy fish topped on a neat pile of wood grilled mussels and squid. Brightly coloured and aromatic sofrito introduced a bit of a South American feel to this dish and it was so good I nearly wanted to lick my plate clean.

Duck fat deliciousness

To accompany our mains a side serve of salad and a bowl of duck fat potatoes were brought to the table. Now if you bear in mind that my Stepmum has a well-known reputation amongst both friends and family for making the best duck fat potatoes these potatoes were up for some scrutiny. Thankfully they were damn good and although my Stepmum’s are definitely better, it was a pretty close call!

Pumpkin pie, pepita sponge, maple ice cream

For dessert the Boy ordered the pumpkin pie with pepita sponge and maple ice cream. Not being a much of a sweet tooth, he isn’t really one to get into the whole concept of de-constructed desserts and I guarantee the only reason he chose this was because it said maple ice cream on the menu. He is very easily pleased for his sweets; give him ice cream and it will satisfy him every time.

For my dessert our waitress recommended for me to have the Valrhona chocolate mousse as she felt this was the best gluten free option to have. It sounded nothing short of amazing; Valrhona chocolate mousse, hazelnut, single origin coffee crème and milk sorbet. I have to say however, after enjoying a succession of very impressive courses, my dessert actually left me feeling somewhat under-whelmed. Even my chocoholic Stepmum agreed with me that it wasn’t that exciting. Please don’t get me wrong, there wasn’t anything specifically wrong with it; it just didn’t feel special like everything else did. After all our other dishes totally exceeded our expectations it was a shame to end the night on a bit of a fizzer.

Overall we were both very impressed on each of our evenings at Print Hall . These guys have nailed all the essential key elements for success; polished, knowledgeable service, interesting and creative food with fresh locally sourced produce where possible and an ambience that makes you feel like you are dining somewhere quite special. I look forward to returning but maybe I will go for lunch next time so that I can actually take some decent photos of their beautiful food!

Luxury Accommodation at the Mandarin Oriental Hotel, Singapore

I may have inadvertently blown our wedding budget to the point that there was very little left in our kitty for a honeymoon. Our original plans were to go on a six week drive up the West coast of America followed by a week in New York. My fantasy of cruising up Route 101 in a bright red convertible with the wind in my hair and not a care in the world has been pushed far, far away into the very distant future. Our make shift post-wedding holiday was instead to be a four day stopover in Singapore; an easy holiday to do as Jetstar land in Singapore on their way back from Phuket anyway.

We stayed at the Mandarin Oriental which is a five-star hotel very conveniently located in the heart of the Marina Bay district right along the Grand Prix track. Our room offered stunning views over the Bay and the city skyline in addition to directly facing onto the Formula One racetrack itself. You could watch the race directly from your own room if you booked it enough in advance! I chose this area knowing it is very central to all the foodie, entertainment and shopping places I had on my wish list to check out. It is also only a couple of tube stations from the Orchard Road shopping district. Our Premium Ocean Room was clean and reasonably newly appointed with a pillow menu, twice daily housekeeping and free WIFI.

On our first night we had already been out for a beautiful lunch at Sky on 57 with my Dad and Stepmum as they were passing through Singapore on their flight home to Melbourne. Ordering room service seemed like the best way for us to kick back and relax. Earlier that morning when we were still in Phuket we had obtained all our unedited wedding video footage from our videographer and we were both itching to watch it.

The Boy ordered one of his favourite comfort foods; a traditional Italian lasagna made with fresh tomatoes, minced beef and mozzarella cheese layered between home-made pasta sheets. Retrospectively, it feels quite odd now writing about him eating meat. In the weeks following our return from Singapore, the Boy made the surprising decision to become a vegetarian. After years of being a big meat eater, I wonder what his favourite comfort food will be now?

In Room Dining: Roasted Mushrooms

I ordered the grilled Norwegian salmon with steamed potato and baby vegetables. Desperate for some greens I also ordered the garden salad which turned out to be quite an enormous serve. In addition to the usual greens it contained asparagus tips, avocado, olives, cherry tomatoes and Parmesan cheese shavings.

During our stay we visited the Axis Bar a couple of times to put our feet up after a hard day eating and sightseeing. Overlooking the Marina Bay they have plenty of comfortable lounges to allow us to unwind from all the wedding excitement over a drink or two.

Gluten free pancakes

In addition to two bars, the Mandarin Oriental has five restaurants. MELT ~ The World Café is their buffet style restaurant where our included buffet breakfast was served. They had an excellent range of gluten free options and every morning the waiter would come over to our table and ask if I wanted my gluten free waffles and pancakes. I’m sure this is the first hotel I’ve been offered both waffles and pancakes that I am able to eat. No wonder I put on so much weight! The waffles had a wondrously thin crisp outer layer and were light and fluffy on the inside.

Kaya! Nutella! Oh yes!

There was a huge range of salads, sliced meats and pastries in addition to both Asian and Western style hot dishes. There was even a waffle counter making fresh waffles while you wait. On our last morning we slept in, nearly missed breakfast and ended up dashing down all dishevelled and sleepy. As we finished off our meals the manager came over to us with two glasses of champagne and a camera wanting to congratulate us on our marriage. Even without any make-up  the natural glow of happiness from us both was easy to capture. Within minutes of returning to our room the photo arrived in a Silk quilted photo frame. What a thoughtful and personal touch.

In addition to the buffet restaurant there are four other restaurants which include Dolce Vita (Italian), Cherry Garden (Cantonese), Morton’s (Steakhouse) and Wasabi Bistro (Japanese). We dined at Cherry Garden one evening where I was gob-smacked that I could enjoy beautiful Cantonese dishes made especially gluten free. Read my review of our meal at Cherry Garden here.

Throughout our stay we found there to be a high level of attention to detail with excellent communication amongst their staff regarding my food allergies. It was refreshing to not have to reiterate at each venue what I could and couldn’t eat and I would have no hesitation staying here again upon our return to Singapore.

Our Six Month Wedding Anniversary at Co-op Dining, East Perth

Only a few weeks ago the Boy and I shared a very memorable lunch at Dear Friends and it was easily one of the best meals we have had in Perth for some time. I love their philosophy of focusing on local and seasonal produce with much of their ingredients being sourced directly from local farmers or foraged from the wild surrounds. On our way home that day we both decided to book in at their city restaurant Co-op Dining, East Perth to celebrate our six month wedding anniversary.

I am still nursing a broken toe therefore my ability to go running has come grinding to a complete halt. We enjoy eating out a lot and I am totally devastated that I can no longer burn it all off on the tarmac. Honestly, it won’t be long before I’m the size of a small house. In a vain attempt to mitigate the anticipated caloric excesses for our dinner we agreed to walk, or in my case shuffle, from our house to Co-op Dining. I sighed in disappointment that I cannot wear high heels, sulkily chucked a pair of flats in my LV bag and headed off in my flip-flops.

It was a Friday night and both of us had to work the next day meaning a degustation was unfortunately out of the question. Instead we chose the five course menu with a couple of suggested wines by the glass. NV Gosset Grande Reserve, Ay & Lemon Lime Bitters

Work or no work I just couldn’t commence this celebratory meal without some bubbles; Champagne definitely remains one of my weaknesses. Coop Dining serve NV Gosset Grande Reserve by the glass which comes from one of the oldest and original Champagne houses originating way back to 1584. Rich and creamy with incredible structure I made sure I savoured every drop. The Boy chose to bypass the booze and ordered a lemon and lime bitters made with lemon myrtle and fresh limes. Some of the soft house churned Guernsey butter that we had enjoyed at Dear Friends was served alongside some home-made bread.

Our first course was a sweet Manjimup marron served with peppery watercress puree, Swan River samphire, a twig of warrigal and some glistening syrupy fermented lime.  The samphire has quite an unusual salty, tangy flavour and is foraged from the banks of an estuary near the Swan River. It was the same type of samphire that we enjoyed last year at Millbrook Winery as part of the Mushroom Mania campaign.

Chestnut soup, Crisp Parsnip (Vegetarian)

The Boy’s next dish was a luscious chestnut soup made from whole roasted chestnuts grown locally in Bridgetown. I really love how these guys are such great supporters of WA produce. His soup was rich and creamy and smelt like Paris in winter to me. For those who are yet to travel to this romantic city; roasted chestnuts are sold there as street food in cones of newspaper on the boulevards.

Cuttlefish, Rabbit Chorizo, Kimchee, Squid Ink (Matched with 2011 Lethbridge Pinot Gris, Geelong, VIC)

Although I was highly envious of the Boy’s heart-warming chestnut soup, I was not to be disappointed with my non-vegetarian option. Chef made his own rabbit chorizo which he served with some WA cuttlefish and more of that dangerously black squid ink puree that we enjoyed at our Dear Friends lunch. The slight gamey flavour of the rabbit was in no way overpowering and balanced graciously with a gentle kick from the cute little blob of kimchee. I successfully avoided getting any squid ink on me again. Winning. Maybe I’m gaining more coordination in my older years?

Soy tofu, Confit Carrot, Wild Garlic, Smoked Yolk

For our next dish, the house made soy tofu made a return visit too. I like how each of the menus for their restaurants shared key elements but then diverged out into their own individuality. Coop’s tofu dish looked so simplistic and symmetrical with each ingredient placed in alternation across the slate. Cubes of house made soy tofu and velvety soft chunks of confit carrot were sprinkled with dashes of spinach powder and placed on a bed of smoked egg yolk.

Soy tofu, Confit Carrot, Wild Garlic, Smoked Yolk

Looks can be deceiving and although this dish may appear basic, more complex flavours were thoughtfully hidden to surprise us. The smoked yolk was thick and strongly flavoured and gave the more subtle flavoured tofu and carrot a bit of oomph. The gently scented wild garlic is foraged on the Mainwaring’s property and I couldn’t help but smile when Kelli’s eyes lit up as she told us how each year they get so excited when they see it sprout up.

Margaret River Wagyu Beef Cooked over Bark, Carbonised Leek, Dijon, home pickles (Matched with 2012 Myattsfield Shiraz, Mourvedre, Viognier, Carmel, WA)

The Boy and I diverged again for our next course as mine included **shock horror** meat. I was given a choice of pork belly or Wagyu beef and opted for the later. Admittedly I confess that as it was a Friday night and as I was onto my third glass of wine by this point my mind had blissfully travelled off with the fairies. As a result I forgot to photograph my dish until I have already devoured a few wondrous mouthfuls. My deepest apologies dear readers, however I’m sure you can still get the idea what luscious cuts of beef they were from what was left on my plate. Cooked over bark and crusted with carbonised leek powder each piece of 4+ Wagyu beef was as soft as sashimi. The wine match for this dish was the 2012 Myattsfield Shiraz, Mourvedre, Viognier and was the second time I had tried this local wine from Myattsfield Wines. After our lovely outing at the Bickley Harvest Festival I have started to appreciate the sumptuous reds made in this region and are going to need to return for more.

Jerusalem artichoke, Guernsey Curd, Courgette, Leek, Nasturtium, (Vegetarian)

The Boy’s vegetarian main focused on Jerusalem artichoke which is just still in season for a few more weeks. The artichoke was prepared two ways; cooked artichoke was compressed into chunks overnight and cooked sous vide and then for the base of the dish was artichoke purée. Chunks of leeks and courgettes tumbled in amongst Guernsey curd and Nasturtium flowers. Mushroom and green olive powder was sprinkled over for a strong flavour boost.

Brin D’Amour: Chef’s homemade cheese

Although we only selected the five course menu, the chef was so kind to send us a complimentary cheese course. It was called Brin d’Amour, or “birth of love”. A perfect choice to celebrate our first six months as newly-weds! Chef Kiren makes this traditional Corsican cheese himself using half Guernsey and half ewes milk. Once made it is rolled in mustard seeds, house made smoked paprika, rosemary, oregano and black onion seeds. The whole process takes about two weeks. The cheese was served with carrot molasses and olive bread. I received some gluten free bread as a replacement.

I was a little off my form as I also forgot to take a picture of our pre-dessert; fresh Donnybrook mandarins and lemon scented fennel topped with Thai basil flowers. A mouthful of spring this cleansed the flavours of dairy goodness off our palates in preparation for our final course.

Donnybrook Apples, Pistachio, rhubarb

Juicy fresh Donnybrook Pink lady apples took the centre stage star for the finale. On a bed of peachy coloured apple puree laid an ice cool scoop of rhubarb sorbet encircled by portions of fresh and poached apples. Topped with slivers of glass sugar, oats and pistachios I loved the layering of textures, temperatures and flavours.

Our night ended with some healthy and cleansing Kombucha, a type of fermented slightly effervescent black tea.

It comes as no surprise that Co-op Dining came out winners at the recent Australian Gourmet Traveller Awards where they received a placing in the top 100 restaurants in Australia. Both Co-op and Dear Friends were also awarded One Star in the highly esteemed GT Restaurant Guide for 2014. This is a team that have proven and maintained their place as foodie “royalty” in Perth yet remain humble, modest and true to their passion. We will most definitely be back.

Sky high on the 57th level of Marina Bay Sands @ Sky on 57, Singapore

On our way home from Phuket still loved up and emotionally high on wedding bliss, we stopped over in Singapore for a few days to unwind before heading home.  We flew in Singapore accompanied by my Dad and Step mum who were also stopping over albeit only for a few hours. The thought of returning back to a heavy work load loomed dark over their minds so for one last hurrah we took to the incredible SkyPark up on the 57th level of the MBS building. There are two restaurants up in the clouds on SkyPark; Ku Da Ta and Sky on 57.  As Ku De Ta served a buffet style lunch we chose to dine at Sky on 57 for a more classy experience with a view.

Our time in Phuket was the most amazing holiday of our lives and we were strongly determined to hold onto the last shreds of celebrations over a bottle of champagne. Still not accustomed to all the bling on my finger, I couldn’t help but take a little cheesy shot as it glimmered in the light. Excuse the shrivelled eczema hands thanks to years of eating gluten.

Head Chef Justin Quek’s style pulls from local Asian cuisines with some hints of European influences.  Singaporean classics like Hainanese Chicken Rice and Hokkien Mee featured on the menu alongside more French inspired dishes like pan seared foie gras and mussel veloute.  The view from the dining room expands across the whole end of the SkyPark’s end deck giving impressive views across the Marina Bay and the city skyline.

Salmon and Oyster tartare, mango and basil coulis, micro salad

My salmon and oyster tartare tasted like a breath of the sea, fresh, salty and not overly fishy. It was beautifully presented with carefully blobbed pearls of mango and basil coulis polka dotted around my slate plate. The mango gave an added creamy sweetness that wasn’t too overpowering.

Tempura of Soft Shelled crab, ginger flower dressing, crunchy vegetables

Dad and the Boy often share similar tastes in food.  It was no surprise to me when they both ordered the soft-shelled crab, a dish that has reached near obsession level with the both of them.  These critters were very meaty and the serving size for an entrée was substantial considering this was fine dining.

Buri Oh Ceviche, micro greens, dried seaweed, truffle vinaigrette

My Step mum ordered the Buri oh ceviche. Wafer thin slices of sustainably farmed Japanese Amberjack, or Hamachi fish sat on a bed of fresh micro-greens and colourful flowers. It was served with truffle vinaigrette however I couldn’t taste any truffle in the mouthful I tried.  Her fish was similarly fresh and delicately soft.

Sautéed Maine Lobster in Asian Pepper Sauce

My Dad and Step mum are generous people and love to spoil those they love. When Dad spotted the two of us pretending not to see the Maine lobster dish on the menu he asked us if we had eaten it before.  I confessed I hadn’t  the only crayfish I have eaten has been Australian in origin. Upon hearing this he insisted we all have the Lobster despite it being nearly three times to price of the rest of the mains choices. It was lightly sautéed in an Asian Pepper sauce and was nothing like any Cray fish I have had before.  In a mouthful I understood what all the fanfare and fuss is about, it is surprisingly sweet and incredibly tender. Totally out of this world. I want more. It’s hard to believe this delicacy was once a food reserved only for slaves and prisoners!

Milo ice cream, evaporated milk anglaise, coffee emulsion, “Jivara” chocolate crumble

We still had a bit of time to kill and looked around for our waitress to order some desserts.  Unfortunately it would appear that in the afternoon the restaurant staff seemed to develop a little bit of amnesia and forgot about our existence as they vacuumed around us and moved tables.  After a good 15 minutes we managed to catch their eye and finally order  our desserts. We ordered two serves of the Milo ice-cream to share amongst the four of us. This dish was ultra-chocolaty with a perfect balance of bitter and sweet. Any excuse to squeeze in a bit of Valrhona chocolate is fine by me!

Once again there was a virtual cloak of invisibility surrounding our table while we were waiting to order our coffees and then again for said coffees to be brought to table.  It was a little disconcerting that while we waited for over twenty minutes for our hot drinks most of the staff chatted and laughed standing by the bar.  A sad drop in customer service compared to the beginning of the afternoon. The wait was long enough for my Dad to write nearly four pages full in my wedding guestbook.  I was so touched to read later that night that he had remembered his speech from the wedding night off by heart and written it down word for word for me to keep forever.

Celebrating my blogiversary at Duende, Leederville

This year has been such a hectic and emotional one which has flown by with the speed of light.  It has been a whole year since the Boy finally managed to convince me after much persuasion to start writing a blog.  After an initial few quiet months while in its fledgling state, it has now grown to be something I am proud to call my own.  Many of my close friends are loyal regular readers and are always keen to be part of the Chompchomp phenomenon by joining me on my gastronomic expeditions around Perth.

My wedding expert friend Tara is one of these supportive people and she jumped at the opportunity of a night out with our respective others to Duende to celebrate my first blogiversary coupled with a bit of “wedding talk”.

It was one of those first glorious balmy spring days and I was drunk on the delightful sunshine and perhaps maybe also the bottle of Billecart the boy bought for us in the afternoon.  I donned a short summery frock, slipped on some killer Diavolina platforms and bared my winter legs.  Call it a stark rebuttal against any further threats of the dreaded cold weather!

We started at The Garden for a few rounds of drinks before heading over to Duende for dinner. Neither Tara nor her husband suffer from any dietary intolerance and were happy to order a selection of dishes that were suitable for me so we could all share. We started off with a bottle of gorgeously bright ruby coloured Pe Tinto Tempranillo, an organic and biodynamic wine from Portugal.   We then proceeded to work our way through most of the gluten free options on the menu.  Of which there were many!

The marinated olive selection contained over four different types with a broad range of textures and tastes to suit all of our palates. The chorizo had generous amount of heat in it and was thickly cut and juicy.

Patatas bravas

Patatas bravas are one of my favourite Spanish dishes. Parboiled potatoes are deep fried before being coated with a variety of spices, vinegar and red pepper.  They can be served with a number of different types of sauces depending on the area of Spain and which can range from a tomato based sauce to more of an aioli style. These crispy slices of heaven had a generous paprika dusting and were seasoned with some lemony tasting vinegar.  The level of spiciness was fairly mild and I would have preferred a bit more of a punch however the Boy was relieved with the relatively low heat.

Pork belly, polenta, roasted pear, muscatel

The pork belly had a luscious creamy texture and literally melted into the polenta without any fatty aftertaste. The pear and plump muscatels gave a pleasant sweet note but I did my best to avoid these two fructose filled fruits.

The lamb rump was quite a surprise.  I didn’t really read the menu carefully enough to be prepared for the enchanting sweet maple flavours from the fenugreek.  It actually took us all a few moments to work out where the flavours came from!  The rump was succulent and pink.

The pickled beetroots were hidden under a loose pile of fresh rocket, goat cheese and hazelnuts. Hazelnuts are my favourite nut, in part due to my praline addiction but additionally it brings back indulgent teenage memories of eating Nutella by the jar full. Although an interesting dish this wasn’t one of the better ones.

Beef cheek, prunes, pickled cauliflower, almond sauce

Initially we were a little reserved in ordering the beef cheeks after hearing negative feedback from a friend that found them to be dry.  Cheeks are a cheaper cut of meat with a higher proportion of fat, sinew, connective tissue and bone in them. Provided they are cooked correctly this generally means they are more delicious, though they do require a little time and care when cooking.

We were right in taking the gamble because our cheeks were incredibly flavoured, delicately tender and we really should have ordered two serves and maybe left out the beetroot.

The sensation of squeaky haloumi always brings a smile to my face.   Coupled with rich smoky undertones of eggplant puree this simple dish was a crowd pleaser.

Px vinegar is made with the sweet Pedro Ximenez grapes and was the perfect combination with gorgonzola to top the earthy mushrooms. I know I’m a little biased as I have a mushroom addiction but these slippery little nuggets packed a powerful burst of flavour and I could have eaten many more had I not already stuffed my face with everything else!

We chose 3 out of the selection of five available French and Spanish cheeses and it was quite a feat narrowing it down to three.  If I wasn’t already bursting at the seams I would have said one of each! Our choice included a semi-firm cow’s cheese Mahon from Spain and two French cheeses; Roquefort, a creamy blue sheep cheese and Sainte Maure, a soft buttery goat cheese.

For sweets we ordered the doughnut balls with condensed milk ice cream.  Obviously these were not for me as they are full of all the gluten in the land; a fact my companions were very content with as it meant there was all the more for them!

Doughnut balls with condensed milk ice cream

After reading a multitude of positive reviews on Duende over the years I cannot believe it took me this long to try them for myself.  They more than exceeded my expectations and have to be the best tapas I have experienced in Perth by far.  We loved it so much that we actually headed back for a quick midweek bite later that following week!    And yes….we ordered more of those patatas bravas.

I have very fond memories of my last time at Matilda Bay Restaurant with two of my favourite people in my life; the Boy and my dearest Mum.  It was Christmas Day lunch some years ago and it remains one of our most relaxing and stress-free Christmas’s to date.  So when the Boy invited me to join him there on a business dinner recently I didn’t have to hesitate in my response!

Being so food obsessed is proving to be my Achilles heel by hindering my success in achieving the svelte bride body that I want. I have a bad habit of over eating and seem to enjoy the feeling of being insanely full.  My solution is simply to focus on eating less for the last six months in the lead up to the big day.  This night out was to be the last night of uninhibited eating before the frustrations of restriction begun so I wanted to go out with a bang.

You can only imagine my disappointment when a few hours before we were to all meet for dinner, the Boy was informed by email that the invitation didn’t extend to partners.  Knowing how much I was looking forward to the evening and presuming the refusal was due to a strict budget, the Boy explained that we were not expecting a free meal and I was more than happy to pay my own way.  Unfortunately this wasn’t good enough for the agency and after receiving a fairly patronising reply the Boy’s blood started to boil.

Even on a stormy night….Perth skyline is so beautiful

Not wanting to disappoint his food obsessed wife-to-be, he softened the blow of the bad news to me by offering to still take me out somewhere nice.  We toyed with the idea of getting a table right next to the one I got booted off at Matilda Bay purely for entertainment value. However after briefly thinking about this further we figured that probably wouldn’t gone down so well!  After a few unsuccessful calls to some favourite venues, he managed to secure us a reservation at InContro in South Perth.  We even managed to get a table with city and river views. (My apologies in advance for the photos…even Gordon didn’t cope in such low level lighting!)

InContro offers a style of dining they call “piccolo dining” which is a bit like a Mediterranean version of tapas. They create small dishes for the entire table to share and it is brought to the table in a tiered rack reminding me of years gone by where I shared High Tea with my Dad and stepmum at Brown’s Hotel in London. After discussing my allergies with our waitress, she offered for the chef to select appropriate dishes to make up a two courses of a piccolo experience. Not being in the mood for anything specific, the Boy and I both smiled at each other and chose to go ahead with her recommendation.  I love surprises!

Moroccan spiced cauliflower and Dorper lamb

Each course contained three carefully selected and quite interesting dishes using lots of fresh seasonal local produce.  The succulent frenched Dorper lamb cutlets were topped with Moroccan spiced cauliflower.  The sweet tasting cumin paired harmoniously with the tender lamb leaving me wishing we had more.

Our seared scallops were plump with a crisp browned surface and a nearly creamy centre of amazingness. On a bed of pea puree and topped with crispy shreds of prosciutto these little morsels were nearly as moreish as the cutlets.  I was pretty excited about what else was to come.

Lobster salad

Our third entrée was simply described as a lobster salad. A fairly decent serve of decadent lobster sat innocently hidden underneath a handful of shredded greens.  Further hiding below the lobster was bite sized chunks of thoroughly dressed avocado, tomato and fresh herbs.  Although this dish wasn’t much to look at, each mouthful was bursting with flavour.

Sticky Black Angus short rib – sorry about the blur!

The sticky Black Angus short rib was the “to die for” dish of the evening.  Unfortunately my photos didn’t turn out as well as I would have liked them to due to the beef sitting at the top of the three levelled tier.  Not being a very tall person I really struggled to steady my camera.  Of course my lack of hand stability that had nothing to do with the three glasses of Billecart I had drunk previously.  Not at all.

Gone!

The meat didn’t just fall off the bone it slivered off and dissolved in the mouth like cotton candy.  The marinade was thick, sticky and subtly sweet and neither of us could help ourselves as we scraped the remaining sauce off the board with our forks, trying to savour its flavour for as long as possible.

In my excitement of this final night of excess I had not bothered to go through the nitty gritty of my fructose malabsorption with our waitress.  I had purely just requested no gluten or no onion.  Thus I did have to sift through our pork dish to avoid the little cubes of pear.  The pork belly had just the right balance of fat, meat and crackling and didn’t leave any unpleasant porkiness taste in my mouth. The crackling gave a satisfyingly loud crunch as I bit into it.

The salad to accompany our mains dishes contained shaved fennel, pear and candied walnut.  Again I had to dodge the pear (my own fault) which was easy enough to do. The salad was light and refreshing on the palate after the two heavier meat dishes.

Trio of ice creams

For dessert the Boy ordered his ice cream as per usual; as you may already know it is fairly uncommon for him to ever order anything else for dessert.  I settled for the only gluten free dessert option which was the polenta cake with butterscotch ice cream.  It was moist and didn’t crumble apart but the butterscotch ice cream was a little sickly sweet for my liking.

InContro is a great local option if we feel like a night out with a bit more class than casual.  We have dined here on several occasions over the years and have never been disappointed with either the food or service and they take good diligence in catering to those with allergies. Of course we will be back.

The Sentinel Bar and Grill, Perth CBD

I hadn’t seen my Bestie since our last outing together a few weeks ago when we went hunting for my wedding dress.  Once we finally did manage to meet up, we had so much to catch up on that it was hard to know where to start.  I was excited to hear all about her new yoga business venture that she was embarking upon.  I have never seen her so inspired and passionate about something before and it makes me so happy that she has found her calling in life. Not everyone gets to experience such satisfaction.

Late last year during the whole post-Engagement party debacle we stopped in at The Sentinel for a couple of drinks while we were waiting for The George’s manager to get back to us with the whereabouts of my iPod. In sharp contrast to the abrupt, unfriendly service we had received only minutes before at The George; the Sentinel staff all greeted us cheerily as we entered.  This jovial attitude left a lasting impression on our memories.

Recalling our previous experience, we decided to return back for a quick lunch in between errands in the city.  The Sentinel is owned by Stephen Scaffidi who also owns the popular Bar One.  Sentinel’s dining areas are stunning, sophisticated and oh so suave – I simply love all that dark polished wood and massively high ceilings. Initially when the restaurant first opened early 2011 they received a scathing review by The Australian’s veteran food critic John Lethlean.  John scored them a measly 1 out of 5. Luckily for them since then it appears they have picked up their game  receiving much better recent reports in local restaurant reviews  and blog posts.

We bubbled in to the swanky restaurant chitty chatting away like only besties can.  Over the moon to be having some quality “bestie-time” as we like to call it we were determined to make the most of this quick and impromptu catch up.  I hadn’t called in advance to notify the chef of my allergies and so I was prepared to be given limited choices off their menu.  To my surprise, our waiter and the kitchen worked together to provide us with a number of options to choose from and were not bothered at the potential nuisance of my requests.

As we waited for our food to arrive, our waiter brought to the table some complimentary, freshly toasted gluten free bread with whipped butter.  This is not something that happens often and I was suitably impressed.  As it was only a Monday afternoon, we both initially hesitated as we gazed over the wine list until we saw some champagne and from then on our rubber arms didn’t need any twisting. Glasses of Mumm champagne in hand we settled in quickly and managed to cover a lot of conversational ground in a short space of time, spanning from weddings to people management through to newsletter writing and coconut water! (Which by the way I am totally addicted to at the moment.)

Beetroot, smoked goat’s cheese, quinoa, chardonnay vinaigrette

Kate and I planned to share a few entrees together and seeing as I didn’t get the quinoa dish I wanted recently at Cullen Wines I was keen to try The Sentinel’s version.  Kate has been a fan of quinoa for years and has been trying to convince me how awesome it is for some time.  It was served with roasted beetroot and dollops of tangy smoked goat’s cheese perched on top of some pickled radish.  I am starting to understand what she has been going on about – if prepared with the right foods it is a lovely treat. I did however struggle to taste the smoky notes of the goat’s cheese, they were too subtle.

Marinated Octopus, lemon, chilli, fresh herbs

We also ordered the marinated octopus served with julienned carrot and fennel with a fresh lemony chilli dressing.  The octopus was lovely and soft without any chewiness. My only gripe was the serving size – way too small for something this tasty (and for the price I guess)!

Steak tartare, fresh horseradish, potato chips

For our third dish we chose the steak tartare.  This is something I have enjoyed a number of times at Rockpool and been blown away every time with its buttery texture and gentle flavours. Recently the Boy and I have been part-time vegetarians so it actually felt a little odd if not a bit scary to eat this dish once again.  To make matter less palatable the meat wasn’t quite as fresh as I would prefer if raw.  The crisp and peppery watercress helped somewhat to disguise the tainted flavour of the meat.

The potato chips served with this dish were nothing like what we were expecting.  I was anticipating some frites, something I consider a classic combination with steak tartare.  Instead there were a neat stack of potato crisps.  They were cut incredibly paper-thin to the point of being translucent but unfortunately they tasted like stale oil and not much else.  This potentially amazing but simple dish was very poorly executed.

Overall our lunch was enjoyable but with a few hits and misses and I would be keen to go back to sample a greater selection of their food in order get a better idea on their overall quality.  The service was friendly and efficient and I look optimistically to my next visit.

I am always feeling like I’m so time-starved; something I’m sure many of you readers can empathise with. I never have enough time in my days and weeks to catch up with the friends I hold dear to my heart. There is only so much of that void in my life that I can successfully offset via networks like Facebook and as soon as I have some time off from work, I get busy lining up catch up dates with neglected friends and family. A fellow foodie Tara and I have both been going on and on about wanting to go to Pata Negra together for ages. I’m sure the first time we discussed it must have been last year some time!

Pata negra is a Spanish tapas bar owned by chef David Coomer of Star Anise fame which was a fine dining icon in Perth for more than a decade. Regrettably Star Anise closed their doors last year but thankfully her edgier sister Pata Negra has remained opened.

After a number of false starts, Tara and I finally managed to coordinate our busy schedules and it was all locked in for a girlie night out. Her husband offered to stay at home with their two adorable little girls, and the Boy even offered to drop us in so we could both drink! We really are lucky women!

Contrary to my usual organisation, I had failed to notify the kitchen of my dietary requirements in advance. I’m not sure how I missed doing this and thus was a bit apprehensive as I sheepishly apologised to our waitress saying that I am a “difficult” customer with a couple of allergies. She didn’t seem too concerned with this and went off to the kitchen to have a chat with the chef.

We decided it was absolutely essential to start with a glass of Billecart-Salmon champagne while we deliberated over the menu. As we became more and more overwhelmed by all the mouth-watering options our waitress came over to say that pretty much anything off the menu could be adapted for me (except obviously the bread and crumbed items). Given my recent run of limited options dining out I was literally blown away. “Like you mean anything? Wow!”

While we agonised what to order we asked for some marinated olives to be brought to the table, hoping some food would facilitate some decision making. I was so thankful this time round that our waiter was more than happy for me to use my flash to take photos as the interior lighting is quite dim. After all my fuzzy images from Marque, I really wanted to be able to relish in some focused pictorial memories. The olives contained a satisfying range of types, sizes and colours allowing a variety of tastes. It was served in adorable little antiquey dishes.

The beef was such a simple dish yet each ingredient was carefully selected to create wonderful tiers of strong yet complementary flavours. The meat was a stunning dark cherry colour and had micro-thin veins of marbled fat running through it evenly. The walnuts introduced a slight bitter taste which was softened by the silky fetta and sweetened by the beets. Exquisite.

Roasted mushrooms, manchego, garlic

Ok, I realise this dish probably doesn’t look like much, but for those mushroom fans out there – this is the bomb. After falling in love with Andaluz’s mushrooms (and going back for subsequent visits for more) I am tempted to say these are even tastier! Some of this decision is possibly facilitated by my passion for the Spanish cheese Manchego. The distinctive and slightly salty flavour of this sheep’s cheese is wonderfully unique and is something not to be missed. Add in some meaty, juicy mushrooms and you have something quite amazing to devour! I again marvelled at how such simple dishes consisting of such few ingredients could be so fabulous.

Marinated Octopus, chorizo and slow cooked egg

I first discovered the deliciousness of slow cooked eggs some time ago at Greenhouse. These eggs are cooked for about 40 to 45 minutes but at much lower temperatures producing a very soft but evenly cooked egg. If you love soft poached eggs you will think these are nothing short of perfection. The octopus was slightly tougher than I prefer but was still very tasty and the chorizo provided a good contrast in textures.

Spiced quail, wild rice, lentils, buffalo mozzarella, egg and smoked almonds

These quails were huge in size! I am so used to being served such tiny little birds but these richly flavoured quails must have been weight lifting in their time! The meat was so moist, easily falling of the bone and it went well with the accompanying nutty wild rice and lentils. Two generous blobs of buffalo mozzarella completed the dish ideally.

Roasted pork belly, figs, watercress

The pork was my least favourite dish of the evening however there wasn’t really anything majorly wrong with it except maybe the meaty part of the pork was a bit dry. I think I was so excited about the layering of tastes in our previously ordered dishes that I wanted it to happen again and again.

Blood plum, meringue and pistachio cream

Our dessert was absolutely blissful. The meringue had all the right components – the crisp outer shell, the hollow crunchy under-surface and the spongy moist centre. After spooning some of the tangy blood plum sauce liberally over the top, it was supremely heavenly. I didn’t try the pistachio cream as it contained gluten but if Tara’s oohs and aaahs were any indication it must have been pretty good. This year I seem to really be having some great success at shortening my restaurant wish list however many of these places just haven’t lived up to my own hype. Pata Negra on the other hand exceeded my expectations by a long shot. Brilliant service, awesome company and fantastic food; I cannot wait to bring the Boy back here!

As high as a kite on French champagne and with Rochelle Adonis‘s exquisite high tea delicacies still swimming around on my palate, my friends and I skipped over the road from her studio to the Hotel Northbridge to extend our celebratory mood a little further into the afternoon. After leaving the bright and clean environment of Rochelle’s, the grimy stark reality of the empty pub was initially a little off putting but good company has a way of distracting your attention from these details and we soon sat to continue our chatter and giggling. Of course we wanted to continue drinking champagne and therefore we were all a tad disappointed to read the drinks menu only contained Australian bubbles. For an exorbitant $68 we got a bottle of Chandon Brut and ordered a tasting plate, salt and pepper squid, and fries.

The food arrived fairly quickly, but we were left totally confused as to how to ration four serviettes, three forks, four knives and one plate amongst the six of us. Odd.  I would have also liked to have been informed when I placed my order for the food that the salt and pepper squid actually came on a bed of fries as we didn’t really need the second bowl. Needless to say one can see from the photo that the salt and pepper squid wasn’t really such. Deep fried battered squid would be a more appropriate description as the dusting was nearly thicker than the squid itself. The added touch of MasterFoods squeeze-on packets of sweet chilli, tartare and tomato sauces didn’t raise the appeal much either. If you want to charge me $17.50 for such a dish then you had better make an effort on presentation or at least increase the size of your serves to make it good value – this dish had only twelve small pieces of calamari!

Moving onto the tasting plate we were preparing ourselves for the worst. Seriously, what were we thinking coming from High tea to this? If only Rochelle let us have another course! The tasting plate contained a paltry four thin strips of Turkish bread, some tasteless cubes of fetta, two small bowls of watery inedible dips, a handful of jarred olives, a pile of  chorizo, about one teaspoon of very scary looking sun-dried tomatoes and some olive oil. The chorizo was the low- light and no one could eat it.  It had an unusual taste that wasn’t pleasant.

Disappointed with such poor quality food, a rebellious streak started to emerge from our little group.  By this time our over-priced bottle of average sparkling was well and truly empty so we decided it would be a fabulous decision to sneakily pop open our remaining bottle of Cattier from high tea. Anyone tried to open champagne sneakily? After a delayed and unsuccessful attempt at smothering that wonderful popping sound with laughter and coughing, the bartender scurried over to inform us we cannot drink our own bottle.  We offered to pay corkage but she wasn’t willing to bend the rules. Fair enough. One of my girlfriends surprisingly managed to squeeze the cork back into the bottle, only for it to pop out later at an impromptu time during our drive home whilst traveling on the back seat. Needless to say the car still smells like celebrations!

High Tea at Rochelle Adonis

For months I have been bursting out of my skin to get myself to Rochelle Adonis for her acclaimed high tea! So when my love and I attended a boutique little wedding expo at Mosmans recently I was attracted to her stall like a moth to a flame. Her passion and gentle nature increased her appeal to me even more and I immediately decided I wanted to have one of her exquisite cakes for our upcoming engagement party. This provided me with the perfect excuse to organise a girly afternoon out with some friends for the purpose of “engagement cake tasting”.

For us foodies in the know, we are all very thankful to have such a world class pastry chef of this calibre residing here in little Perth. Rochelle grew up in the French Canadian city of Montreal before moving to Sydney to train as a pastry chef.  She then moved to London where she worked in an exclusive wedding cake boutique making cakes for the rich and famous including both the British and Saudi Royal families before she moved onto to Vienna to work in the prestigious Hotel Sacher.

Returning to Australia, she was acting head pastry chef at Forty One in Sydney before joining Matt Moran’s at Moran’s and then once he opened Aria as the head pastry chef there. She moved to WA in 2001 with the ambition of starting her own business and has grown from a small scale home kitchen beginning to the highly acclaimed boutique she has today.

Upon entering her studio, you will be distracted by all the eye catching photos decorating the walls with examples of her handy work.  Each cake is prepared with upmost attention and care and they almost look like they couldn’t be real. The two long communal marble tables fill much of the room giving the feeling you are sitting in someone’s kitchen rather than a café. We all came very prepared with enough champagne to sink a ship and with high expectations to have our tastebuds buzzing. We most certainly were not disappointed. Our only complaint was it all ended way too soon! We could have easily done with another few courses!

The first course was savoury. After my recent enforced gluten indulgences, I thought it best that I stick with her gluten free options – I was after all actually taste testing for a party that will occur once I’m back on the straight and narrow gluten free. My plate contained a cup of creamed corn soup, a vegetable frittata, a cube of pork terrine and a falafel with some harissa. The soup was hot and seasoned perfectly warming us all up as we waited for our champagne to take over the job. The pork terrine had a dollop of horseradish and Dijon mayonnaise. The short sharp heat of the horseradish blended harmoniously with the lingering flavours of the terrine and was the highlight of the four.

The girls also had the pork terrine and the soup on their plates. Their gluten-filled options included a vegetable galette with goat’s cheese and Rochelle’s famous cucumber sandwiches using entirely homemade ingredients including her own handmade butter. The sandwiches looked so cute all cut up in perfect little rectangles sitting in a row.

Our second course was desert. My plate contained mint ice cream with Valrhona chocolate, raspberry jelly, meringue with lemon curd, blueberries and violet, and a blood orange salad on top of a moist butter cake with gooey brulee style custard. The ice cream was not overly sweet or sickly, nor was it too creamy. It had the perfect balance with a fresh minty aftertaste leaving a clean fresh feeling on the palate. My first glancing impressions of the raspberry jelly reminded me of Turkish Delight. Not being the biggest fan of this I was pleased to find an absence of Turkish’s signature delicate rose flavours replaced with a much preferred and rather strong tarty berriness. For those who know Chompchomp well – you will be aware I am a huge fan of all things berry. Well, berries generally come shaped in little balls – and I’m a sucker for food in little balls.  The meringue was one of my favourites. It contained all the elements of a well-made meringue: crunchy, chewy and soft, and the accompaniment of sharp tangy lemon curd moved seamlessly into the gentle after notes of the more subtle violet and blueberries.

The blood orange salad tasted like Rochelle had successful managed to capture Spring in a cup! Seeing as our one week teaser of Spring weather has turned viciously back to wet winter windiness I was so thankful to be reminded glorious Perth Spring was just around the corner. Buried deep below the array of sweet blood orange and delicate petals was a layer of brulee and dense orange butter cake. I nearly stuck my fingers into the bottom of the bowl to clean out the last remnants.

By this point we had polished off a bottle of Moet, a bottle of Cattier and a bottle of G.H. Mumm champagne and we were all in very fine form. We really didn’t want our experience to end and thus were determined to carry on with our celebrations. After pondering for some time at the counter, a number of us bought more little cakes, nougat and other delights to take home to share with our loved ones who missed out on the delightful experience. We then all skipped over the road to the Hotel Northbridge to continue our festivities. Oh boy what a contrast in standards of customer service, ambiance and food would we find there!
